One of the most popular crockpot recipes is Black Bean Chili with beef. This recipe is from About.com. You will need these ingredients

“3/4 cup cooked black beans, 1 lb. stew beef, cubed, 2 tablespoons bacon drippings or vegetable oil, 1/4 cup chopped onion, 1/4 cup chopped green peppers, 1/2 cup diced green chile peppers, 3 tbsp. tomato paste, 3 to 4 beef bouillon cubes, or beef base, 1/4 tsp. ground cumin, 1 tsp. minced garlic, 1/2 tsp. salt and pepper, 1 cup shredded Monterey Jack or mild Cheddar cheese”

The first step is to brown stew beef using bacon drippings or regular oil together with the onion and the green pepper. You will then combine all of the mentioned ingredients above in a crock pot. Leave the crock pot cooking, on low, for 6 to 8 hours. Prepare this meal before lunch time so that it will be ready by dinner time. You can now serve the chili in bowls. Do not forget to sprinkle the cheese.
